Gourmets with a keen nose can smell the Klemens Pastry Shop in Brixen/Bressanone’s historic district from miles away. In the wee hours of the morning, the scent of fresh coffee and fine cakes, pastries, warm bread rolls, and delectable pralines starts wafting through the surrounding alleys.

The Klemens Pastry Shop is a traditional family-run business that places great value on high-quality, preferably locally sourced ingredients that were produced in accordance with the best practices of fair trade and sustainable agriculture. I could be the best pastry chef there is, but if I don't make the quality of my ingredients and how they are processed my top priority, the final product could never be perfect”, pastry chef Klemens Tscholl says as he explains his approach to the trade.

The family-run business makes sure that while their baked goods may be small, their taste is truly grand. Klemens Tscholl artisanally processes the fine ingredients together with his skilled employees to create delicious South Tyrolean pastries, such as their apple strudel, which bears the South Tyrolean seal of quality and comes in a variety of doughs including puff pastry, shortcrust, and strudel dough.

In an age where more and more baked goods are produced on an industrial scale, the Klemens pastry shop is particularly proud of the attention to detail they give each individual piece. Everything on offer here is made “with love for the trade and the raw materials”, explains the pastry chef, who has passed on his passion for the profession to many apprentices over the years.
